Wasting the waste? … tomato rejects.

Is it possible to make a product with surplus value from residual waste – in this case from tomatoes? In the future it will be strategically important to deal with food more efficiently and effectively. After establishing a product passport (showing leftover food substances and their potential use), the tomatoes were pureed, while a team of chefs described the taste. The ‘conversion’ of this (without E-numbers and preservation numbers) was tested by a taste panel of consumers. The results are shown alongside the Nielsen figures and discussed with several category managers. The outcome of this total study was then given to the customer, including implementation recommendations.
